Culinary treats have a long tradition here. The most spectacular among them wears horns and is over 1000 years old.
The Boškarin, an Istrian ox, descends directly from the Auero ox. Some of these proud animals still inhabit this region. The meat of this unique cattle breed is, without any doubt, one of the reasons why Istria has burned in our culinary memory.
The olive grove on MONDELLEBOTTE is our tradition.
The harvest is picked by hand and pressed in the nearby oil press within 24 hours.
Even in Roman times, Istrian olive oil was the gold standard for quality, to this day these oils are among the best in the world.
Our virgin olive oil refines your dishes. A bottle is always ready in the kitchen.

MONDELLEBOTTE’s stone façade breathes the tradition of Istrian’s architecture. An architecture that is unable to reach compromises and that openly advocates for minimalism and autarky. The new contemporary materials such as wood and glass engages in a conversation with the Venetian heritage of peninsula.
Istria has always been a place of inspiration. Just like in late antiquity when Euphrasius built a basilica in the old town of Porec, which is now a World Heritage Site with its magnificent mosaics.
